Die The Wolf Distillery was born out of the 2020 Oregon wildfires. We refer to our distillery’s concoctions as "spirits of opportunity," largely because a tragedy that affected so many people and businesses in Oregon created an unexpected chance for us. In the aftermath, Patricia Green Cellars tasked us with producing what has become some of the most impressive and unique whiskeys on the planet. Since then, we have sought out the grains, fruits, and nuts that define Oregon’s rich agricultural industry to craft spirits that are expressive, distinctive, and delicious.
In 2022, Patricia Green Cellars’ owner, Jim Anderson, and Associate Winemaker, Matty Russell, partnered with Lynsee Sardell, the distiller behind Dogwood Distillery. With the help of Steve and Cheryl Mozinski, they acquired the distillery, which had been in operation since 2010. The small, Forest Grove-based distillery had spent over a decade producing high-quality, affordably priced vodka, gin, and absinthe. In 2021, Lynsee took over the distilling operations, leading to a chance encounter with Patricia Green Cellars—one of Oregon’s premier wineries. A surplus of smoke-tainted wine sparked an idea, and from that inspiration, this small group decided to purchase the distillery, continue making whiskey, and embrace the boundless possibilities Oregon has to offer.
"Die The Wolf" (Italian: Crepi il lupo) is a phrase used to acknowledge someone wishing you luck while expressing confidence in your ability to succeed. It symbolizes overcoming challenges and persevering against the odds.
We are a team of individuals who have chosen Oregon as our home and believe wholeheartedly in the magic this state has to offer—its breathtaking beauty, its opportunities for small businesses, and its vast array of natural ingredients for crafting exceptional spirits. Every Die The Wolf bottling is made with integrity, using locally sourced ingredients from small farmers. As we continue to grow, our lineup will feature blueberries, barley, rye, sorghum, apples, pears, and anything else that thrives under Oregon’s sun, soil, and water.

Dogwood Distilling
We have preserved the original business and continue to produce the signature spirits of the distillery that first opened in 2010. These spirits are widely available at OLCC stores and in many of your favorite bars and restaurants across Oregon.
Dogwood Distilling was founded with the goal of offering customers exceptional quality for their money. When it opened in Forest Grove, being located in the deep western suburbs of Portland wasn’t as common as it is today. However, the distillery’s location—near the heart of Oregon’s wine country—made it an ideal spot for the next evolution of the business.
We remain committed to the original vision of the distillery and take pride in continuing to offer our lineup of delicious spirits at prices well below those of premium brands in the same categories.

Lynsee Sardell is the founder and distiller of Die The Wolf Distilling in Forest Grove, Oregon. Drawing inspiration from the state's rich agriculture and stunning landscapes, Lynsee creates beverages that embody the true spirit of Oregon. With over 16 years of expertise in fermenting, formulating, and distilling, she infuses each creation with a unique artistry, crafting specialty spirits that reflect her passion and dedication.

Jim Anderson
Owner
As the Owner and Executive Winemaker at Patricia Green Cellars, he brings a unique blend of experience and personality to this project. His main contributions include expertly tasting and evaluating alcohol, writing checks, and managing logistics. With one of the longest winemaking careers in Oregon, he occasionally provides valuable insights and direction when needed. His role has primarily focused on quality control and contributing the wine portion to the Blueberry Eau de Vie.

Matty Russell

Matty has been with Patricia Green Cellars since 2006, steadily working his way up from his initial role as a harvest worker to becoming the Associate Winemaker in 2021 at one of Oregon's best and most diverse wineries. Along with a deep love and knowledge of distilled beverages, he brings invaluable expertise as one of the best "physical plant" specialists any winery or distillery could hope to have.
Blueberry Eau de Vie
The Blueberry Eau de Vie is the first of our spirits and is assuredly one of the best Blueberry Eau de Vies ever fashioned. Quality begins at the source, and this exceptional spirit owes its character to a collaboration with renowned Oregon winemakers.
